Slow Morning in the Kitchen | Cozy Leek Soup

In today’s video, I’m taking you through a slow morning as I make a simple leek soup from scratch.
If you’d like to follow along, here’s the simple leek soup I made:
🥣 Simple Leek Soup (Serves 4-8)
Ingredients:
• 3–4 large leeks (white and light green parts)
• 2 tablespoons butter or olive oil
• 1 small onion (optional)
• 2–3 medium potatoes, peeled and chopped
• 4-8 cups chicken or vegetable broth
• Salt and pepper to taste
• 1/3 to 1/2 cup heavy cream
From the garden (or whatever you have on hand):
• Fresh sage
• Parsley
• Rosemary
• A pinch of dried red chili pepper
Instructions:
1. Slice the leeks and rinse them well (they like to hide little bits of dirt between the layers).
2. In a pot, melt the butter or warm the olive oil over medium heat.
3. Add the leeks (and onion if using) and cook gently until soft and fragrant, about 8–10 minutes.
4. Add the potatoes and broth, along with your herbs and a pinch of chili pepper.
5. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, until the potatoes are tender.
6. Blend until smooth (or leave a little texture if you prefer).
7. Stir in the cream, then season with salt and pepper to taste.
This is one of those recipes that’s very forgiving — you can add whatever herbs, vegetables, or little extras you have on hand and make it your own.
It’s simple, comforting, and feels like a quiet exhale in the middle of the day.
